👨🍳 Step-by-Step Method
Step 1: Cook the Rice
Wash basmati rice and soak it for 20–30 minutes. Boil water with whole spices and salt. Add rice and cook until it is 70–80% done. Drain and keep aside.
Step 2: Prepare the Masala
Heat oil or ghee in a pan. Add sliced onions and fry until golden brown. Add ginger-garlic paste and sauté for a minute. Then add tomatoes and cook until soft.
Step 3: Add Spices and Chicken
Add turmeric, red chili powder, garam masala, and salt. Mix well. Add chicken (or vegetables) and cook for 5–7 minutes.
Step 4: Add Curd
Add yogurt and mix well. Cook until the chicken is tender and the masala becomes thick.
Step 5: Layer the Biryani
In a pot, add a layer of cooked rice, then a layer of masala. Repeat layers. Add saffron milk, coriander, mint leaves, and fried onions on top.
Step 6: Dum Cooking
Cover the pot with a lid and cook on low flame for 10–15 minutes. This helps the flavors blend together.
